Brew Baked Chicken Wings

24 Fresh or frozen wing segments (uncooked)
4 12 oz. lager beer, uncapped and allowed to go flat
4 cloves minced/crushed garlic
1 tbsp. black pepper corns
2 large sprigs fresh rosemary
2 whole bay leaves
1 cup tomato sauce
½ cup red pepper sauce
4 tbsp. Worcestershire sauce
½ cup melted butter or alternative
2 tsp. salt
3 tbsp. chili powder
1 tsp. cayenne pepper

Basic Preparation

Preheat the oven to 375 degrees. Pour the 4 flat 12 oz. lager beers into a large pan or Dutch oven. Add the minced garlic, pepper corns, fresh rosemary sprigs, and bay leaves. Stir to combine and bring to a boil over  medium high heat. Add the chicken wings and bring back to a boil. Once the pan starts to boil again, set a timer for 12 minutes and start the wing sauce.

In a large bowl, add the tomato sauce, red pepper sauce, Worcestershire sauce, melted butter/alternative, and all of the remaining dry seasonings. Stir to mix completely and set aside.

When the timer expires, place the beer blanched wings on a parchment paper lined cookie sheet , skin side up. Bake for 30 minutes at 375 degrees, or until golden brown. Remove from the oven and place the wings in the wing sauce bowl in small batches and stir to coat completely. Place the finished wings on a display plate and serve with Blue-cheese dressing and celery. Happy Super Bowl!!
