6 cups crushed saltine crackers ½ cup butter or alternative 1 onion, chopped 2 cloves minced garlic 2 tbsp. Chopped parsley 2 tsp. Old Bay seasoning ½ tsp. Ground pepper1 cup clam juice, divided2 cups grated Swiss cheese4 cups fresh chopped spinach1 lb. Faux crab or real lump1 qt. ½ and ½ Basic PreparationIn a medium saute pan, saute the onion and mince garlic until tender and translucent. Stir in the parsley, Old Bay seasoning, ground pepper, and cook an additional two minutes. Deglaze with 4 ounces of clam juice. Set aside to cool.
Crush 3 inner packs of saltine crackers (6 cups), and place in a large mixing bowl. Add the saute onion mixture, chopped spinach, and grated Swiss cheese. Mix completely until well combined.
Spray a large casserole dish with release and place a layer of the cracker mixture on the bottom of the casserole dish. Next, add a layer of crab, and repeat the process until the casserole dish is 90% full. The last layer should be the cracker mixture.
In a sauce pan, heat 1 quart of half and half to a medium hot temperature (120 degrees). Add the balance of the clam juice and stir to mix completely. Carefully, pour the liquid all over the assembled casserole until the liquid level comes to the mixture level. Bake for 1 hour and 15 minutes. Allow to rest 10 minutes before serving.
