1 pkg. Pre made pizza dough, or home made
1 cup roasted garlic puree (recipe below)
4-5 Plum tomatoes, sliced thinly
8 oz. fresh Mozzarella cheese , thinly sliced or cut into small cubes
8oz. sliced provolone cheese
½ cup chopped fresh basil
½ tsp. Course ground black pepper
3 tbsp. olive oil(drizzle over pizza )
4tbsp. Balsamic glaze, divided: half for roasted garlic, half for drizzle over pizza
Pizza Dough Ingredients
1 cup flat beer
2 1/4 tsp. Yeast
1 tsp. Salt
2 tbsp. Sugar
2 tbsp. Butter or alternative
2 ½ cups all- purpose flour
Roasted Garlic Ingredients
12- 18 cloves peeled garlic
2 tsp. dry basil
½ tsp. Salt
½ tsp. course ground black pepper
½ cup extra virgin olive oil
2 tbsp. Balsamic glaze
Basic Roasted Garlic Preparation
Place all of the ingredients except the balsamic glaze in a small oven proof bowl. Cover with foil and seal. Bake at 375 degrees for one hour. Remove from the oven and place in the finished ingredients in a food processor or blender. Add the balsamic glaze and pulse until a smooth puree is formed. Set aside while you prep the remaining ingredients.
Basic Pizza Dough Preparation
Dissolve the yeast in the beer and pour into the mixing chamber of your bread machine. Now add salt , melted butter, sugar ,and flour. Set your bread machine to the dough only setting and start.
When the dough is finished place it on a cutting board and divide into four equal portions. Rub each portion with olive oil and set aside. Roll each piece into a circular flat bread about a 16th of an inch thick .Oil each top surface and stack on a cookie sheet with parchment paper between the rolled skins. Refrigerate until you are ready to assemble and grill.
Basic Grilled Pizza Assembly and Grilling
Take your uncooked pizza crust and place it on the hot side of the grill. Grill about two minutes or until bubbles begin to form. Quickly remove the pizza crusts from the heat and place on a oiled cookie sheet. Spread your roasted garlic puree evenly, making sure not to over sauce . Next, add the provolone cheese followed by the sliced Roma tomatoes. Cover the pizza ingredients with the fresh Mozzarella cheese and drizzle with olive oil and the remaining Balsamic glaze. Slide the pizza back on to the grill and grill an additional 2-3 minutes, or until the cheese has melted and the crust is golden brown. Slice and serve immediately.
