2 cups all purpose flour
2 tsp. each salt, course ground pepper, and ground rosemary
3 lbs. pork loin medallions, or country style ribs
2 cups twice sliced onion
2 lbs. fingerling potatoes
2 cups baby or petite carrots
4 cups sliced mushrooms
6 cloves smashed garlic
4 large sprigs fresh rosemary
2 packages onion soup mix
2 cups vegetable stock
½ cup Marsala wine
4 tbsp. olive oil
Basic Pork Preparation
Place the flour and seasonings in a large zip lock bag and seal.
Shake until all ingredients are well mixed. Set aside and prepare your pork.
Cut the pork loin into two inch medallions and set aside. If you use country style ribs, cut each rib in to two pieces. Add the olive oil to a large saute pan over medium high heat. Place 3-4 pieces of pork in the zip lock bag and shake to coat evenly with the seasoned flour. Add the pork to the hot saute pan and sear on both sides until a golden brown color begins to form. Remove the meat from the heat and set aside. Deglaze the hot pan with the Marsala wine, making sure to scrape the bottom of the pan. This will add an additional dimension of flavor to your dish. Again, set aside while you load the crock pot liner.
Basic Crock Pot Preparation
Add all of the vegetables and half of the mushrooms, in layers, to the crock pot.(Fingerlings, carrots, onion, and half of the mushrooms) Next add the smashed garlic and fresh rosemary. Now, sprinkle one of the dry onion soup packages evenly over the vegetable mixture.Next, Pour the Marsala mixture over the vegetables.
Take the seared pork pieces and place them evenly across the top of the vegetable mixture. Now, spread the remaining mushrooms over the pork. Sprinkle the second onion soup package evenly over the mushrooms and add the vegetable stock . Set your crock pot on low and let cook for 10-12 hours.
Final Presentation
Place a generous portion of the fingerling potatoes and carrots in the center of the plate. Take two pieces of pork and lean same against the vegetables. Sprig with fresh rosemary and serve immediately.
