2 lbs. Boneless/skinless chicken thighs

Marinade

2-4 chipotle peppers
½ cup olive oil
juice of two fresh limes
6 cloves minced garlic
1 tsp. Salt
1 tsp. Ground black pepper
1 tsp. Crushed red pepper

Coating

1 cup panko bread crumbs
1 cup plain bread crumbs
2 tbsp. Red chili powder
2 tsp. Salt
1 tsp. ground cumin
1 tsp granulated garlic

½ tsp. Ground black pepper

Low Calorie Blue Cheese Dressing

1 cup low fat cottage cheese
1 cup plain Greek yogurt
2 tbsp. Minced onion
1 clove minced garlic
½ cup crumbled blue cheese

Marinade Preparation

Place all marinade ingredients into the food processor and process until creamy and smooth. Set aside and prepare the chicken and coating.

Blue Cheese Dressing Preparation

Place all ingredients except the blue cheese into a food processor and process until creamy and smooth. Pour into a storage container and stir in the blue cheese. Cover and refrigerate for 6 to 8 hours.

Chicken and Coating Preparation

Place all of the coating ingredients into a large zip lock bag and shake to combine completely. Set aside while you prepare the chicken.

Take the boneless/skinless chicken thighs and open them up on a cutting board. Each thigh should yield two to three wing look alike pieces when cut on the short side. Place all cut pieces into a second large zip lock bag. Pour the processed marinade into the bag and seal. Rotate the bag until all pieces are well coated. Place the sealed bag on a plate and refrigerate for 6 to 8 hours. Turn the bag over at least one time to insure complete marination.

Take the marinated pieces, 3 to 4 at a time and place in the coating bag. Shake to coat evenly. Place the coated pieces on a lined and greased cookie sheet, making sure to leave at least a half inch space between the pieces. Bake at 425 degrees for 30 minutes. Remove from the oven and allow to rest for five minutes before plating. Serve with eighter the home made or purchased low calorie blue cheese dressing and traditional celery pieces. “GO GIANTS”

Cook Time:30 minutes at 425 degrees
